We fixed this last night, and it was soooooo goooood!
Zucchini and chocolate, who would have guessed?

Chocolate Zucchini Cake
This recipe calls for a 9×13 pan, which is equivalent to the volume of the Electric Skillet.
1& 3/4 cups sugar
1 tsp vanilla
½ cup buttermilk
2&1/2 cups flour
¼ cup cocoa powder
½ tsp baking powder
1 tsp baking soda
½ tsp cinnamon
½ tsp cloves
2 cups grated zucchini
¼ cup chocolate chips
- Blend sugar, eggs, vanilla and buttermilk.
- Sift dry ingredients and add to mixture. Mix in zucchini and choc chips.
- If using electric skillet, preheat to 305 F and cut a circle of parchment paper to fit the round bottom of the pan. Spoon mixture on top of parchment, cover and “bake” for 45 minutes.
- If cutting the recipe by half, use your 9” skillet or 2 quart saucepan with parchment paper again on a setting of medium. Will take approx 15-20 minutes. Check in the center with a toothpick.
** If the cake burns, your setting was too high. Just adjust for next time.
