This morning I wanted to make Omelets because all of our chickens starting laying eggss again and we had about 4 dozen eggs. This is from the new Saladmaster cookbook and was so easy and very good.
1 T skim milk
Simply mix all ingredients and beat well.
Preheat 9 inch (small) skillet on medium heat for 2 minutes.
Spray pan with PAM cooking spray. (don’t use the cheap stuff, PAM is worth it)
Pour in mixture and put lid on it.
Reduce heat to low and cook for 8 minutes.
Remove lid and fill omelet with your favorite filling.
Fold and serve.
