Quick Easy Chicken Quesadillas and Salsa

Last night I made the best quick quesadillas.  Here is the recipe.

Pre-Heat Saladmaster electric skillet to 400.

1/2 onion diced fine

1 1b chicken breast cut into strips or chunks

4 cloves garlic minced


Flour Tortilla shells

Cheddar cheese and or jalepeno jack shredded on #1 cone

Jar jalepeno’s in juice

Once hot, add 1/2 onion diced

Cut chicken breast into strips or chunks and add to onions.

Add 4 cloves of garlic, minced.

Put lid on skillet for 3 minutes.

Stir chicken, onions, and garlic till pan glazes.

Add 1/4 to 1/2 cup water to deglaze pan.

Add 1 T jalepeno juice and or jalepeno’s.

Remove from pan and keep hot.  TIP, use 1 qt saucepan with lid to keep hot.

Add enough water to clean pan.  RESERVE JUICE.

Wipe pan clean and adjust heat to 350.

Add 1 T butter let melt and add 1 T reserved juice.

Add tortilla and move around in juices.

Allow to brown 1 minute then add filling and cheese

Fold over torilla and spinkle shell with a little salt

Brown and serve with Torilla chips and Fresh salsa (see recipe below).


Easy Salsa

1 can Rotel tomato and peppers

4 cloves garlic

1/2 onion diced fine


1 T lemon juice

Mix all ingredients and refrigerate till cold.
