4th of July

What a great day so far.  We slept late, harvested in the garden, and relaxed a little.  Now time for lunch.  Had to fire up the grill first.

First the coals need to white and red hot in the center.

While those are getting hot we need to do some prep in the kitchen.

Laura prepared some bags of Zucchini for the freezer. We cut it on the #1 cone of our saladmaster machine, the finest cut. 3 cups in each bag = a loaf of zucchini bread.

Now lets prep the goodies we took out of the garden this morning.

These are the red onions picked this morning and not sliced for the hamburgers and diced for the stir fry vegtables.

These are the yellow squash from the garden.

Now we need to prep the hamburgers for grilling.  I make nice patties and then sprinkle the top with equal parts salt, fresh ground pepper, and garlic powder.

Ready to go…. now lets check the fire.

I like to put the coals in the middle and towards the back so I can have indirect heat for the burgers. I then close the lid and let them cook. After turning I continue to let them cook and then finally I put them over the direct heat in order to finish them with nice grill marks and that BBQ flavor.

I think it is time to eat!

Oops! I almost forgot the veggies.

We simply mix the yellow squash and the zucchini with red onion a little celery and top it off with some fresh rosemary.  Heat some butter in a skillet till lightly brown then add all the veggies and stir fry.  It smells sooooo good.  I then turn the heat off and let stand for about 5 minutes.  Just the way I like them… Hot and a little crunch.

Now, time to eat.

We have hamburger with red onion.  Stir fry veggies.  Baby carrots and salad mix.

Very good meal!

    You should try cooking the veggies on the grill! Zucchini, red onion, sliced mushrooms and a red/yellow bell pepper. Toss with some vinaigrette or olive oil and other spices and cook in a grill basket………..we do it all the time. Really like potatoes on the grill as well. 😉
