This was a great breakfast with the family.
(Adapted from America’s Test Kitchen Family Cookbook 2006)
2 cups flour
2 T sugar
2 t baking powder
1/2 t baking soda
3 T unsalted butter, melted
2 cups buttermilk
1 t vanilla
1 to 2 t oil
Start by pre-heating the oven and placing a cookie sheet on the middle rack.
I didn’t have buttermilk, so you take 2 cups of milk and 1 T lemon juice and let it sit, to make buttermilk.
Mix the dry ingredients and stir well.
Mix the eggs, butter, and buttermilk together. Stir well then add the vanilla.
pre-heat your skillet and cook pancakes. Keep warm in the oven till ready to serve.
1 16 oz package frozen strawberries
3/4 cup sugar
Place in saucepan and put on med-high heat. Cook till thickened.
Let cool before serving, it thickens more.
